A recipe

Jelly Bean Cookies

What you need:
 
  • 2 sticks unsalted butter at room temperature
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon baking powder
  • pinch of salt
  • 3/4 cup jelly beans

What you do:
 
Preheat the oven to 350 F or 175 C. In a bowl with a mixer, cream together the butter and sugar for about 3 minutes. Then add the egg and vanilla, mixing until just combined. In a separate bowl, whisk together the flour, baking powder and salt. With the mixer on a low speed, gradually add the dry ingredients into the wet ingredients, until the dough is just formed. Stir in the jelly beans then wrap the dough in plastic wrap. Let the dough relax in the fridge for 30 minutes.

Divide the dough into rounded tablespoons and place on a cookie sheet lined with parchment paper. Bake for 12-15 minutes. Do allow them to cool before consuming, a hot jelly bean can really do a number on your tongue.
